Keto Chocolate Donuts

So very delicious and healthy, these mini low carb and keto-friendly chocolate donuts are just a perfect treat for all chocolate lovers. Moreover, they are infused with healthy nutrients from the zucchini, nuts, and all the healthy fats. However, alongside being healthy, these donuts are smooth, creamy and a real treat.

Generally, spaghetti squash is used to cook this recipe. But, you can very well utilize zucchini if that is your preference. Most importantly, ensure the veggie is cooked. And, also, that most of the water is removed, using a cheesecloth, or kitchen towel. This extra step will ensure optimal texture for this dish!

Meanwhile, we used full-fat coconut milk (coconut cream). But, you can use heavy cream, or full-fat almond milk instead.

Also, the topping is made with no-added sugar dark chocolate melted with a little bit of coconut milk. Though, you can change that using coconut oil instead of coconut milk. Also, you can add some nut butter as well.

Finally, we topped it with chopped almonds. Instead, you can play around with it and use coconut flakes, or walnuts, for instance. Likewise, there is no limit to making these sugar-free donuts even more delicious and fun! Let’s Ketofy it!

Ingredients Required.

Wet  Ingredients

  • 6 Tbsp Melted Unsalted Butter
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • ½ Cup Coconut Cream 
  • ¼ Cup Shredded Zucchini

Dry Ingredients.

Topping

  • 50 g 85% Dark Chocolate (No Added Sugar)
  • 1 Tbsp Coconut Milk
  • A Tbsp Erythritol (Optional)
  • A Tbsp Sliced Almonds

How to Make Keto Chocolate Donuts?

Step 1: Firstly, add all wet ingredients into a blender and reverse-blend until smooth.

Step 2: Secondly, in a separate mixing bowl, add and mix all the dry ingredients to make keto chocolate donuts.

Step 3: After that, pour in the wet ingredients into the mixing bowl. And, using a spatula, stir and mix until chocolate donuts mixture turns homogeneous.

Step 4: Subsequently, take donuts molds. Next, pour the chocolate donuts’ mixture into a piping bag and fill the donuts. Also, ensure the molds are sprayed with coconut spray to avoid sticking to the bottom.

Step 5: Meanwhile, bake the chocolate donuts’ mixture in the molds for 20 minutes in a preheated oven at 350 F. Further, let them cool on a cooling rack.

Step 6: Above all, for the topping, heat the coconut milk in the microwave for one minute. And, add the chopped chocolate. Meanwhile, mix until all melted. 

Step 7: After that, dip the top of the donuts on the chocolate ganache and sprinkle with chopped almonds! Enjoy your keto chocolate donuts!
