Keto Eggplant Chips
As we all know, eggplants contain a lot of antioxidants and a high amount of Vitamin C. In addition to it being a great source of dietary fiber, it indeed has a low amount of net carbs with only 3 g per 100 g. Thus, this makes them perfect for consumption on the keto diet. Because, they are very versatile and can be cooked in a lot of different ways.
Here, we at Ketofy, are proposing to you an extremely simple recipe for keto eggplant crispy chips. And, trust us, they taste delicious and can be reserved either as a side dish or a snack.

Ingredients Required.
- 1 Unpeeled Sliced Medium Eggplant
- 1 Tbsp Olive Oil
- 1/4 Tsp Cayenne Pepper
- 1/4 Tsp Oregano
- A Quarter Tsp Dried Coriander
- 1/2 Tsp Paprika
- A Pinch of Salt
- A Quarter Tsp Black Pepper
How to Make Keto Eggplant Chips?
Step 1: Slice the eggplants into thin strips, about ¼ cm thick.
Step 2: After that, arrange the slices on a plate and season with salt. Further, put aside for one hour and regularly drain any unnecessary liquids.
Step 3: Meanwhile, preheat your available oven at 200°C.
Step 4: Transfer the slices on a baking sheet and season both sides with the above mentioned herbs. Next, drizzle the olive oil onto both sides of the slices as well.
Step 5: Bake in the oven until crispy. To clarify, this can take about 20 minutes.
Step 6: Your eggplant crispy chips are ready! Best enjoyed while the crunch lasts.
Please Note:
It’s important to let the salted eggplant slices sit for approximately 1 hour. Because, this lets them dry out before baking. Otherwise, they might turn out soft instead of crusty. In addition to that, the slices need to be thin, otherwise you’ll need to bake them for longer period.
Also, each one of the herbs is optional. You can either skip it or replace with another one, according to your preferences. For example, you can add powdered garlic or onion. You can also add grated Parmesan. In order to do so, sprinkle it on top of the eggplants around 3-4 minutes before taking them out of the oven.
